docs: remove peerDependencies from catalog supported fields - #7230

The catalog: protocol does not currently resolve in peerDependencies (references silently become *). See yarnpkg#6925; a fix is proposed in yarnpkg#6926.

The docs list
peerDependenciesas supported forcatalog:, but it isn't yet: it resolves to*(see #6925, fix proposed in #6926). Removing it from the list until that lands.
